Happiness is a perfume you cannot pour on others without getting
a few drops on yourself!

An idea:  To share a little happiness with someone, try writing a note saying something like "Someone cares and is praying for you today" and leave it somewhere for a stranger to find.  You could place it on a public bathroom mirror (without anyone seeing), or leave it in a magazine at the doctor's office etc...  use your imagination with this. 
Someone who finds it may be blessed by it, or they may be down and smile when they read it.  You never know how you can impact someone's life by such a small gesture.  Actually pray for the 'person' who will find it after you've placed it somewhere. 
You will be blessed by this also!

A Recipe: Texas Caviar

A friend Alison brought this to work one day to share with the girls and
it was delicious.  I would like to share it with my blog friends.  This is great to take to a cookout, or wherever!  You can double the recipe easily and it is so good to be so simple.  Hope you'll try it and love it like I did!
Texas Caviar
Drain and rinse:
1- 15oz can of black beans
1- 15oz can black eye peas
1- 15oz can white shoepeg corn
place in a large bowl
Add:
1 cup diced red pepper
1 cup diced yellow pepper
1 cup diced celery
1 cup diced sweet onions
(Other options to mix in (if you don't like one of these items) are chopped Roma tomatoes, black or green olives, or anything else you like.

Dressing:
1/4 cup canola oil
3/4 cup cider vinegar
1 cup sugar or 3/4 cup Splenda
1/8 tsp. black pepper (or to taste)
1/4 tsp. salt (or to taste)

Whisk all of the above together for the dressing in a separate bowl. 
Mix dressing and vegetables together, then chill for 8 hours or up to 3 days.

This is great served with frito or tostida scoops or saltines.

Do we all have some "hidden prisons of hate?"
Saw Charlie St. Cloud today.  The movie was great but sad.  Zac Efron the hunk from The High School Musicals was the lead star.  He and his little brother Sam was hit by a drunk driver, Sam died, and Charlie (Zac) dies but is brought back to life (for a second chance) at life.  However he isn't able to move on and gets a job as caretaker at the cemetary where Sam is buried.  He also meets with Sam (really Sam's ghost) to play catch every night at sunset and has been doing so five years after his brother's death.  It is not until he meets a girl (at the cemetary visiting her grandfather's grave) that he begins to live and love again.  But not until a few more tragedies happen.  I will keep to myself the ending, so as not to ruin it if any of you decide to see it.  It is definitely worth seeing.  I rate it 4 **** out of 5!
Today is supposed to be 92 again! I am so ready for Fall.  I went to see the movie Inception yesterday.  It was good but a little too long (especially in a freezing movie theatre).  It is about dreams and others manipulating and planting dreams in other people's minds.  It was deep and I didn't get all of it, so I guess I'll be getting it from Netflix to watch again.  Hopefully I'll totally understand it the second time around.

Orange-Vanilla Frozen Yogurt Pops

Try these delicious and nutritious homemade frozen pops!  A great way to get the kids to eat yogurt and not even realize it...give them a try.

Prep time: 5 min
Freeze time: 6 hours
Yield: 8 pops
Cost per serving: $ .66

You will need:
1 12 oz. can frozen orange juice concentrate, thawed.
1/2 cup sugar
1 Tbsp. vanilla extract
pinch of salt
1 1/4 cups plain Greek Yogurt (do not use nonfat)

1.  In a large bowl, combine juice concentrate with 1 1/2 cups water.
Whisk in sugar until dissolved.  Whisk in vanilla and salt.  Whisk in
yogurt, mixing until well combined.

2. Place 8 7-oz. paper cups on a baking sheet.  Pour mixture into cups, filling halfway.  Freeze until slightly firm, about 1 hour.
Place craft or popsicle sticks in center of each cup, then return to freezer until completely firm, 6 hours or overnight.  To unmold, peel off paper cups.
serve immediately

170 calories, 4g fa, 42mg salt, 31 carbs

It was a nice day today!  Off work, ate lunch at our world famous Beacon....cheeseburger/slaw/onion rings and fries.  And sweet lemon Beacon tea!  Lounging around, I also watched a great movie, Shutter Island, with Leonardo D'Caprio.  It was set on an island at an asylum for the criminally insane.  A psychological thriller, this movie has a twist at the end that blows your mind.  I recommend watching this movie.

Think I'll give myself a mani and pedi now.  This is pampering myself day, then on to Saturday, when I plan to see "The Karate Kid" at the movies.

I hope everyone has a safe and happy weekend.

Fine eloquence consists in saying all that should be, not all that
could be said.

Recipe: Blueberry Cobbler

Blueberry Cobbler
(with ice cream on top!)

2 cups fresh or frozen blueberries
(I used fresh since they are in season)

1 tsp. cinnamon
1 tsp. lemon juice
1 cup all-purpose flour
1/2 cup sugar
1 tsp. baking powder
1/2 cup milk
2 tblsp. margarine, melted
                                                                     This was yummy!
Topping
1/2 cup sugar
1 tblsp. cornstarch
1 cup boiling water

***To prepare***

Mix the berries, cinnamon, and lemon juice;  pour into a greased 8 in. pan.

In a mixing bowl, stir flour, 1/2 cup sugar and baking powder; stir in milk
and margarine.  Spoon mixture over berries. 

For topping, mix 1/2 cup sugar and cornstarch; sprinkle over batter.  Slowly pour boiling water over top.

Bake at 350 for 45 to 50 minutes or until cake tests done with a toothpick.

Yield: 9 servings

Ok, so I've had 12 days off from work.  I went to Pigeon Forge, Tn and had a great time in a beautiful condo.  So why have I been so depressed since I got back on Thursday?  I have everything anyone could want.  I'm so blessed, yet for the past two days I have been in bed the majority of the time and have done nothing.  I feel like I'm so alone and I am because I isolate myself.  I have not wanted to see or talk to anyone since Saturday.  This is a miserable existance.  That's all I'm doing is existing.  I'm not living.  Other people go and do new things all the time yet I am standing still.  Why?  I wish I knew.  But this has been the cycle I've lived since my early teen years.  I'm so sick of it.  I'm so tired of wasting my life.  I know in my head, that I only have one life to live, yet it's more than half over and I've done absolutely nothing with it.  It seems there is no light at the end of this long long dark tunnel.  In the past few years I have lost many friends because of my depression.  I simply don't have anything or any 'energy' to give to a relationship or a friendship.  My whole life is consumed by work and sadness.  Sadness and work, nothing else.  I lie, I have someone else to take care of and it is completely draining.  It is not a healthy relationship.  I hope that one day I will wake up and will be able to take control of my feelings and my life and begin to enjoy it.  There is no joy in my life right now.  Nor is there any peace inside.  I am constantly in a state of fatigue and depression.  Please wake up Freida,  you don't have much more time I tell myself, but as of yet, Freida hasn't listened to any positive self-talk.  Does Freida really want to wake up or is she just waiting to die and have it all over with?

I will regret sharing this later...but isn't this what a blog is for?
