Barbecued Chicken Pizza

Preheat oven to 425; place one 12 oz pre-baked pizza crust on a baking sheet; spread with 1/2 cup barbecue sauce.   Set aside.

Toss: together 2 cups shredded Publix (or any) Deli Rotisserie Chicken and another 1/2 cup barbecue sauce until combined.  Spread mixture evenly over the crust.  Sprinkle with 1/4 cup thin red onion slices and/or 1/2 cup chopped or thinly sliced sweet pepper, if desired.  Top with 1 1/2 cups shredded Monterey Jack or Mozzarella cheese.

Bake in a preheated oven for 10-12 min. or until crust is lightly browned and cheese is melted.

Cut in wedges. Makes 6 servings

Serve with a salad.

Recipe: Pickled Cucumbers

4 large cucumbers
2 tbsp. salt
1 cup white vinegar
1/4 cup sugar
1/2 tsp. white pepper
2 tbsp. minced parsley (optional)
2 tbsp. snipped fresh dill (optional)

Wash cucumbers; wipe dry. Pare. Cut into thin slices; place in medium bowl.  Sprinkle with salt; toss lightly. Cover with a plate; weigh down with a heavy can.  Let stand at room temp. for 2 hours.  Drain cucumber slices well; pat dry with paper towel and return to bowl; mix well.  Combine vinegar, sugar, and pepper in small bowl; mix well. Pour over drained cucumbers in bowl; cover and refrigerate several hours or overnight until well chilled.

To serve: Drain cucumber slices, place in serving dish or container for your picnic, sprinkle with dill and parsley, if desired.  Yield: 6 cups

Recipe: Three-Herb Deviled Eggs

Three- Herb Deviled Eggs                      


 2 tablespoons snipped fresh dill or 1 1/2 teaspoons dried dillweed


12 Hard-boiled eggs                               


2 tablespoons snipped fresh chives


1/4 cup mayonnaise                               


Salt to taste


1/4 cup dairy sour cream


2-3 teaspoons Dijon mustard 
              
2 tablespoons snipped parsley


Garnish: freshly ground black pepper


paprika  or fresh dill (optional)


One-slice through each hard cooked egg about 1/3 of the way from the top; scoop out yolk.
Cut a think slice off the rounded bottom so it sits flat.  If desired chill the top and bottom of
each egg for another use.


Two- Place yokes in a bowl; mash with a fork.  Add mayo, sour cream and mustard; mix well.
Stir in parsley, dill and chives.  Season to taste with salt and black pepper.  Stuff egg yolk mixture into egg whites.  If desired, sprinkle tops with paprika or cayenne pepper and garnish with additional fresh
dill. 


120 cal. per egg, 10g fat, 216 mg cholesterol, 145 mg sodium, 1 g carb

Do you remember Helen Cornelius from the 1970's?

This is Helen Cornelius and I after her show at the Chapman Cultural Center a couple of weeks ago!  She used to sing (and still does at times) with Jim Ed Brown.  They were popular in the early 70's and had hits such as  Lying in Love, I don't want to have to marry you, Leaving it up to you and more... She can still sing and she put on a great show.  All of the old songs she sang brought back many memories... It was an enjoyable evening.

John 14:16-17 NKJV

Ever wonder what it means to truly have the Holy Spirit living within you? It’s a strange thought. But, comforting none the less.

As the passage in John tells us, we know the Holy Spirit, we recognize and have a relationship with Him, because He “dwells with [us] and will be in [us].” These words present a mental picture to me of the Holy Spirit not only living within us, guiding and directing us, but also walking beside us, holding our hand along the way, the manifestation of God’s “very present help in trouble” (Psalm 46:1).

Whether you are on a crowded city street or on a deserted island with no one else present, you are never alone. Many times, the loneliness you experience is the result of simply not acknowledging who is already there. Acknowledge Him and He will be there. Even now. You always have an audience of One!



Prayer

Father, thank You for always being there for me. Help me to know that I am not alone. Holy Spirit, walk with me and dwell in me as I seek to become one with You. As I abide in You, may my feelings of loneliness be overcome by the beauty of solitude. Amen.

Low Fat Dessert- Banana Mousse (serves 4)

Enjoy this no guilt dessert!

Bananna Mousse

Ingredients:
2 Tbsp lowfat milk
4 tsp sugar
1 tsp vanilla
1 medium banana, cut in quarters
1 cup plain lowfat yogurt
8 slices (1/4 inch each) banana

1. Place milk, sugar, vanilla, and banana in blender.  Process for 15 seconds at high speed until smooth.

2. Pour mixture into small bowl and fold in yogurt.  Chill.

3. Spoon into four dessert dishes and garnish each with 2 banana slices just before serving.

Optional additional toppings:  almonds, strawberries, blueberries, lite whipped topping

Beware today is April Fool's Day!   It is also Census day, which means if you haven't mailed in your census form, look for a census worker to visit you at home soon.  A census worker will have to come out and request the information.  Beware of scams!  A legitimate census worker should have a badge for ID, will never ask for your social security number or your signature. 

It's Spring and it is beautiful!  High 80's expected today, the bird's are singing,  I'm not working, what more could I ask for?   Absolutely nothing, I am blessed.

Today is also the premier day for the Apple IPad.  It may give the E-reader a run for it's money.
