Today Sunday 09/16/2012

A big hello and welcome to my blog, Life Matters! 
I want to share my exciting (or not) Sunday with you.
I must say it was exciting when I woke up this morning!
I'm thankful every morning the Lord lets me wake up and
I tell him so!

This morning started with my favorite cereal, Honey Bunches of Oats
with Almonds!  Did you know this cereal only has 6 grams of
sugar per serving.  The average cereals have 12+grams up to 20+grams
of sugar.  Plus this cereal tastes great.  I add in some raisins for their
sweet taste and I love raisins! 

Next, I went to my home church Restoration and heard wonderful
praise and worship and a helpful message from my Pastor.

McDonalds for lunch - $1 large diet coke, $1.99 Grilled chicken wrap (with
Honey Mustard dressing) and a yogurt/fruit parfait!  It is possible to
eat healthy at McDonalds!

Home for the remainder of the day.  Watched Carolina Panther/New Orleans
game and my Panthers won!!  35-27

Napped after,  ...... and the rest is pretty much the same.  I rested on
the Sabbath! Busy week coming!  I am looking forward to it!

Elephants, Mosquitoes, and Going the Extra Mile

I’m writing today to ask you a very important question upon which things in your life will greatly depend in yet unseen ways. Are you ready? Here it is:
Have you ever been bitten by an elephant?
Have you?
Okay, I’m going to go out on a limb and assume that most of you reading this answered no to that question. But let me ask you another one:
Have you ever been bitten by a mosquito?
I’m going to assume everyone’s answer for this one is yes. And do you want to know why? Because it’s always the small stuff that will get you.
This silly little question exercise is something that the character Jones uses in my book The Noticer. It’s all part of a larger lesson on something that I think is of vital importance for everyone to learn—how to make “going the extra mile” your normal.
We always hear the phrase “go the extra mile,” but what exactly does it mean? Well, there are two factors that must become part of your behavior if you want that phrase to apply to you:
1. Sweat the small stuff (the “mosquitoes” of life).
Many people ignore the small stuff (I’m sure you’ve heard the common expression, “Don’t sweat the small stuff”) and claim they have their eye on the big picture. But what they fail to understand is that the small stuff is what makes up the larger picture of our lives.
The beautiful masterpiece you want your life to be is composed of tiny brush strokes, little actions and choices, that happen day after day, hour after hour, and even minute after minute.
Paying attention to the small stuff means attending to the people, events, and relationships in your life with an uncommon attention to detail. It means consistently doing the second step of going the extra mile:
2. Consistently doing more than is expected of you.
I met Julius Irving, Dr. J, one time. When we shook hands, I promise that his fingers wrapped around my palm five or six times…they were the biggest things I’ve seen in my life! I asked him, “How did you go from being Julius Irving to being Dr. J?”
His answer was simple. He told me, “I have always demanded more of myself than anyone else could have ever expected.”
No one expected him to do the things he did, to practice like he did, to stay as late and work as hard as he did. He demanded it of himself. He demanded more than anyone could have ever expected.
Now, I know most of us aren’t professional basketball players, but this can easily be applied to all areas of life, no matter what you do or who you are. If you demanded more of yourself than anyone else could ever expect, what would your life be like? Who would you become?
If you demanded more of yourself than anyone else could ever expect, how would you act? What would you do? How would you feel? Can you picture it? Going the extra mile—no matter what—starts with you and your expectations for yourself.
So what expectations do you have for yourself right now? What expectations do you have for yourself as a parent? What expectations do you have for yourself as a spouse? As a businessperson or as a friend? What expectations do you have for yourself as a citizen in your community and country? What are some new expectations you could develop that will make you not only better, but will also make you truly exceptional in each of these areas?
Think about it…are you ready to go the extra mile? If so, how are you going to do so?

Ingredients
    • 2 medium cucumbers, peeled and seeded
    • 2 tsp. salt
    • 1/3 cup rice vinegar
    • 1 tbsp. sugar
    • 2 tsp. Kikkoman Soy Sauce
    • 1/4 tsp. grated fresh ginger root

Methods/steps
Cut cucumbers into thin slices; place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes, or until cucumbers are softened. Drain and squeeze out excess liquid. Combine vinegar, sugar, soy sauce and ginger in serving bowl; add cucumbers and mix well. Chill thoroughly before serving.

Honey Basil Lemonade

Who doesn't love lemonade on a hot summer day?
This recipe is just a little different. It uses honey and basil!

Ingredients:
2 cups water (divided)
1/4 cup honey
2/3 cup freshly squeezed lemon juice
4 large fresh basil leaves torn finely
Ice
lemon slices (optional)

Preparation
  • In  a small saucepan, combine 2/3 cup of the water and the honey.
  • Cook and stir until honey is dissolved.  Remove from heat and cool completely.
  • In a large pitcher combine lemon juice and basil leaves.  With the back of a wooden spoon press basil to bruise leaves.
  • Stir in remaining water and the honey mixture.
  • Serve over ice and garnish with a lemon slice if desired
  • Makes 4 cups

Lemonade by the Pitcher (with Splenda)


INGREDIENTS

  • 5 cups water
  • 1 cup fresh lemon juice
  • 1 cup SPLENDA® No Calorie Sweetener, Granulated
  • Ice cubes for serving
  • Fresh mint sprigs and lemon slices for garnish (optional)

DIRECTIONS

  1. Stir water, lemon juice, and SPLENDA® Granulated Sweetener
     in a large pitcher until the SPLENDA®Granulated Sweetener dissolves.
  2. Serve over ice, garnished with the mint and lemon, if desired.

Ingredients 
  • small package of elbow macaroni
  • 1 can sweet peas
  • 1 can corn
  • 1 cup onions, chopped
  • sweet pickles, chopped
  • 4-5 boiled eggs, chopped
  • tomatoes, chopped
  • 1 cup grated cheese (your choice)
  • bell pepper, chopped
  • mayonnaise
  • salt and pepper to taste
Instructions
  1. Boil macaroni according to package directions. Drain and cool.
     
  2. Mix all remaining ingredients together, adding the macaroni at the end.
     
  3. Add mayonaise to consistency of your liking. Salt and pepper to taste.
     
  4. Serve cold.

I have noticed that when I do allow myself (which is rarely)
to Let Go and Let God, there is peace and serenity.
The outcome, in most cases, turns out much better
when I let my Higher Power (God) have control.

I admit I struggle with letting go on an hourly basis.
I'm not proud of this, but I AM working on it!
I'm sick of trying to control my life as well as
everyone else's.  All of my anxiety comes from

I must learn to fully surrender all of my worry,
angst, and problems over to God.  I have to
get to this point or I will live in torment forever,
and this is the last thing I want to do.  Pray

Recipe: Almond Crusted Tilapia

Almond Crusted Tilapia:  from Southern Living

Servings:Makes 4 servings Prep Time:15 minutes Cook Time:9 minutes

Ingredients

  • 1 cup sliced almonds, divided
  • 1/4 cup all-purpose flour
  • 4 (6-oz.) tilapia fillets
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons olive oil

directions

    1. Process 1/2 cup almonds in a food processor until
     finely chopped, and combine with 1/4 cup flour in a shallow bowl.
    2. Sprinkle fish evenly with salt; dredge in almond mixture.
    3. Melt butter with olive oil in a large heavy skillet over medium heat;
    add fish, and cook 4 minutes on each side or until golden.
    Remove fillets to a serving plate.
    4. Add remaining 1/2 cup almonds to skillet, and cook, stirring often,
    1 minute or until golden. Remove almonds with a slotted spoon, and sprinkle over fish.

Holy Guacamole, Batman! This smooth avocado mix features
fresh salsa for a tangy dip that tastes excellent on chips. Go gaga for guac!

5-Minute Guacamole
Ingredients

    1 medium ripe avocado, peeled and cubed
    1 tbsp. of salsa
    1 clove garlic, peeled
    1/4 tsp. of salt
Methods/steps
In a blender, combine all ingredients; cover and process until smooth.
Transfer to a small bowl; serve immediately.
