pineapples at the entrances to some homes.  Since
the colonial days the Pineapple has been a symbol of
hospitality.

Legend has it that Sea Captains sailing the Carribean
came home with exotic fruits.  A captain would spear
a pineapple on his fence post to let friends know
he was home safely and to please visit.  He would
then serve food & drink and regale visitors with
tales of the high seas.

A Sweet Way to Say "Thanks for Coming"

If you're planning a breakfast or brunch for just "the girls" use this tip!

Look for vintage aprons when you're shopping at a flea market, goodwill, or yard sales.  You
can get them for a song.  Collect a few to hang around the back of each chair surrounding the
brunch table at your next brunch.  A cute idea, yes?  I think so!

Occasionally we need to take time from our busy life to "sharpen our saw" so to
speak. Everyone needs time to renew and reawaken our lives.  Sharpening is
needed in all areas of our life; physical, mental, social/emotional, and most
important Spiritual!

No one else can motivate us or make us do this.  We must do it for ourselves.

Some ideas to get you started!

Physical: exercise regularly, take a stress-management class, have your nails
and hair done, plant a flower or vegetable garden, or read a book on nutrition.

Mental: Think of possible changes in your life, spend time alone, read a good book,
learn to play an instrument, start a journal, reach back to joyful times as a child
and think about them.

Social/Emotional: Have a good cry, eat lunch with a friend, go to the mall
and people-watch, spend a day doing anything you want, visit a friend, or volunteer.

Spiritual: Read the psalms, meditate on Scripture, give of yourself, examine your
motives, listen to good Christian music or visit someone at the hospital of
nursing home.

Wake up!  I't time to do a self check-up.  You deserve it.

Oreo Ice Cream Bars by Pat Neely

What you need

20 Oreo cookies, chopped (about 2 cups)
3 Tbsp. butter, melted
4 cups butter pecan ice cream, softened
1/2 caramel ice cream topping
1 1/2 cups thawed Cool Whip Whipped Topping
1/3 cup Planters cocktail peanuts, chopped

Make it

Combine: cookie pieces and butter until well blended.
Press onto bottom of 9-inch square pan.

Spread: ice cream carefully over crust, drizzle
with ice cream topping.  Cover with Cool Whip
and nuts.

Freeze: 3 hours or until firm

Healthy Banana Shake

Ingredients
1 medium very ripe banana, frozen
1/2 cup vanilla low-fat yogurt
1/4 cup chopped California walnuts
1-2 tablespoons honey

Directions
1.Place banana, yogurt, walnuts, and 1 tablespoon honey in a blender.


2.Blend on low speed until ingredients start to mix together. Then increase to high speed and blend until smooth. For a sweeter smoothie, add another tablespoon of honey. Serve immediately.

TIP: To make a frozen banana, peel and cut the banana into chunks. Wrap in plastic and place in freezer several hours or overnight

Peanut Butter & Strawberry Pockets

This recipe is a  fresh spin on the old stand-by
PB&J sandwiches using fresh fruit instead
of the jelly!  Give it a try with your kids...it's healthier.

Start with halving two large whole wheat pita bread rounds.
Open the halves to make pockets.

In a small bowl, stir together 1/2 cup of chunky peanut
butter and 1/4 cup raisins.  Spread mixture inside pita
pockets.

Divide 1 cup sliced strawberries and 2 tablespoons
sunflower kernels among pockets.

Serve immediately or wrap and chill for up to 6 hours.
Makes 4 servings.
(These would be great to take on a picnic when warm weather comes)

Quick Chocolate Fudge Sauce

Ingredients:
1 can (12oz) Nestle Carnation Evaporated Milk
2 cups (12oz) Nestle Toll House Semi-Sweet morsels
2 teaspoons vanilla extract

Directions:
Combine evaporated milk and morsels in medium,
heavy-duty saucepan.  Cook over low heat,
stirring frequently, until morsels are melted.
Remove from heat; stir in vanilla extract.

and Delicious!


Serve warm as a dipping sauce for fresh fruit or
spoon over ice cream or cake.  Store remaining sauce
tightly covered in refrigerator.

If you haven't seen "Always Patsy Cline" at the Chapman Cultural Center  in Spartanburg, SC
I highly recommend you do!  It is awesome.  You will hear all of Patsy Cline's classic songs.  Nita Biven plays the part of Ms. Cline and she does an excellent job.  Becky Koon who is a veteran of stage and screen plays Patsy Cline's most die-hard fan, Louise.  She is hilarious.  These are two very talented ladies and (they are real life sisters.)  You have two more chances to see this wonderful performance.
The setting is the Grand Ole Opry complete with a band and back up singers, and Louise's kitchen.

Homemade Oreo Recipe: Great for Teachers on Valentine's Day!

Homemade Oreos


makes 25-30 sandwich cookies



Ingredients

For the chocolate wafers:

1 1/4 cups all-purpose flour

1/2 cup unsweetened Dutch process cocoa (I used Hershey’s Special Dark Cocoa)

1 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1 to 1 1/2 cups sugar [see recipe note]

1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter

1 large egg



For the filling:

1/4 cup (1/2 stick) room-temperature, unsalted butter

1/4 cup vegetable shortening

2 cups sifted confectioners’ sugar

2 teaspoons vanilla extract (I used clear vanilla extract)

Optional- Gel dye



Method

1. Set two racks in the middle of the oven. Preheat to 375°F.



2. In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.



3. Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool.



4. To make the cream, place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy. (Optional: Blend in a tiny bit of gel dye until you reach the desired color.)



6. To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe teaspoon-size blobs of cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream. Dunk generously in a large glass of milk.



Notes:

- Hershey’s Special Dark Cocoa Powder instead of Dutch Processed.

-Wilton Gel Dye to color the centers.

-Once I measured out a rounded teaspoon of dough, I rolled the dough into small balls before baking.

Fresh Snow Cream Recipe~

Ingredients


8 cups freshly fallen snow
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract (adjust to your taste!) 

Directions

Place a large clean bowl outside to catch the snow!
Place snow or shaved ice into a large bowl. Pour condensed milk over and add vanilla. Mix
to combine.  Serve immediately and enjoy!

Broccoli Walnut Salad: Healthy Lunch Recipe

2 cups fresh broccoli, cut into small pieces
2 tablespoons chopped walnuts
2 tablespoons raisins
2 tablespoons mayonnaise
2 teaspoons lemon juice
2 teaspoons sugar

In a small bowl, mix broccoli, walnuts and raisins.
Combine mayo, lemon juice, and sugar.  Mix into
salad.   Cover and refrigerate 1 hour.
Yield: 2 servings

I love to save $$ using coupons!  I want to share this tip with you...

When you find a coupon for a product you regularly purchase,
wait about 3 weeks before using it.  Grocery stores bet on
consumers rushing out to buy the item, so they keep their
costs at full price.  Then the store will put the item on sale
a fews weeks after the coupon is published.  By holding on
to it and using it when the item is on sale will give you the
maximum savings.

Grandma Jo’s Potato Soup (Nothing better on a cold day!)


2 lbs. potatoes, peeled and diced
1/2 lb. carrots, peeled and diced
2 stalks celery, diced
1 onion, diced
4 c. water
12-oz. can evaporated milk
1/4 c. butter, sliced
onion and garlic seasoned salt to taste
pepper to taste
8-oz. pkg. shredded Cheddar cheese
3 slices bacon, crisply cooked and crumbled

Combine vegetables and water in a stockpot over medium-high heat. Cook until vegetables are fork-tender, 15 to 20 minutes. Reduce heat to low; stir in evaporated milk, butter and seasonings. Heat through. Ladle into soup bowls; garnish with cheese and bacon. Serves 6
