Ingredients
- 2 medium cucumbers, peeled and seeded
- 2 tsp. salt
- 1/3 cup rice vinegar
- 1 tbsp. sugar
- 2 tsp. Kikkoman Soy Sauce
- 1/4 tsp. grated fresh ginger root
Methods/steps
Cut cucumbers into thin slices; place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes, or until cucumbers are softened. Drain and squeeze out excess liquid. Combine vinegar, sugar, soy sauce and ginger in serving bowl; add cucumbers and mix well. Chill thoroughly before serving.
Ready in 35 min

Honey Basil Lemonade
Who doesn't love lemonade on a hot summer day?
This recipe is just a little different. It uses honey and basil!
Ingredients:
2 cups water (divided)
1/4 cup honey
2/3 cup freshly squeezed lemon juice
4 large fresh basil leaves torn finely
Ice
lemon slices (optional)
Preparation
This recipe is just a little different. It uses honey and basil!

2 cups water (divided)
1/4 cup honey
2/3 cup freshly squeezed lemon juice
4 large fresh basil leaves torn finely

lemon slices (optional)
Preparation
- In a small saucepan, combine 2/3 cup of the water and the honey.
- Cook and stir until honey is dissolved. Remove from heat and cool completely.
- In a large pitcher combine lemon juice and basil leaves. With the back of a wooden spoon press basil to bruise leaves.
- Stir in remaining water and the honey mixture.
- Serve over ice and garnish with a lemon slice if desired
- Makes 4 cups
