Gary Coleman died today at 42

I remember watching "Different Strokes" in the 1980's and thinking how adorable this
little guy was.  Loved it when he said "Whatchoo talkin bout, Willis?"

RIP Gary Coleman

My journaling of this psalm. 

My belief is that God always sees my tears and knows when I need help.  He will
never forsake me.  He's always there. He's there for you too.  Just reach out....he will
reach back.

Just want to wish all of my reader's a Happy Memorial Day on Monday.  I hope all of you have a long

weekend off!  Have you got some great plans this weekend?  I would love to hear some of your

traditions for Memorial Day.  Leave me a comment about how your family celebrates this first

"official" launch of the summer season.  My family usually goes to the legendary Beacon drive-in for

some barbeque!  I love the Beacon and alot of people who come to SC like to visit it.

Apple-Raisin Oven Pancake

1 apple, cored, peeled and sliced            
1/3 cup raisins                                          
2 T. brown sugar, packed                        
1/2 t. cinnamon                                        
4 eggs
2/3 cup milk
2/3 cup all-purpose flour
2 T. butter, melted
Garnish:  powdered sugar (optional)

Toss together apple slices, raisins, brown sugar and cinnamon; spoon into a
greased 9" pie plate.  Bake at 350 degrees for 10 to 15 minutes.  Remove from oven; set aside.
Whisk together 4 eggs, milk, flour and butter; pour over apple mixture.  Increase oven temp to 450
degrees; bake until golden, about 15 minutes.  Pancake will puff up and will fall slightly when
removed from the oven.  Sprinkle with powdered sugar; slice into wedges.  Serve warm.
Makes 8 servings.

Enjoy breakfast outdoors on a deck, patio or screened porch!  Pull out the picnic table or
spread out a quilt and enjoy the cool morning air....listen to the birds sing!

Hope you try this delicious pancake.  Freshly squeezed orange juice would be great with this...

Easy Crabmeat Sandwiches

Ingredients:
1 lb cheese (sharp or mild; your choice)
1/2 cup butter or margarine
2 teaspoons Worcestershire sauce
2 egg yolks, beaten
6-oz can crab meat
8 hamburger buns or bread of your choice

________________________________________
Melt cheese and butter in top of double boiler.
Add Worcestershire sauce, egg yolks, and flaked
crab meat.  Mix thoroughly and spread on halves of
buns. Broil until bubbly

Yield: 16 servings

"Five seagulls are sitting on a dock.  One of them decides to fly away.  How many seagulls are left?

"Well...four, right?" 

"No, there are still five.  Deciding to fly away and actually flying away are two very different things."

There is absolutely no power in intention.                                

The seagull may intend to fly away, may decide to do so, may talk with the other seagulls about how wonderfull it is to fly, but until the seagull flaps his wings and takes to the air, he is still on the dock. 
There is no difference between that gull and all the others.

Likewise, there is no difference in the person who intends to do things and the one who never thinks about it in the first place. 

Intention without action is an insult to those who expect the best from us...

This message comes from a book I've read by Andy Andrews called "The Noticer."
Andy Andrews is a well known motivational speaker and author.  This book made me very emotional and it spoke volumes to me.

If I can only harness these valuable lessons and apply them in my life, I could be a much better person.
I'm trying...

I highly recommend this book for anyone who needs a different perspective in their life.

  • Sudden confusion, trouble speaking or understanding

  • Watch your weight
  • Don't smoke
  • Exercise 2 1/2 hours each week---such as a brisk 30-minute walk five days a week.

  • Keep your cholesterol at a healthy level
Tip: Snacking on 3 oz. of nuts daily increases artery clearing HDL (good) cholesterol levels by 11%, enough to cut heart attack risk by 25% or more, say UCLA researchers.

Arrived in Charleston around 2pm.  The sun is out and it is warm, but the hotel pool is not open!  Savannah and I are very disappointed.  There is not even an indoor pool.  This sucks.  The wind is blowing to beat the band.  I definitely do not want to live in Charleston. 

We had supper at Hyman's Seafood which is highly overrated in my opinion.  The price is outrageous and we had to pay $10 just to park!  This trip is not starting out like I planned.  Nowhere to go from here but up...............
